Nu ska man ju inte tampra f\u00f6r mycket med gravad fisk, s\u00e5 jag j\u00e4mf\u00f6r f\u00f6rst mitt spanska recept med ett svenskt gravningsrecept p\u00e5 str\u00f6mming. Under tiden ligger mina nyink\u00f6pta str\u00f6mmingsfil\u00e9er i frysen f\u00f6r att bli av med eventuella mikroorganismer.<\/p>\n<p>Det spanska receptet \u00e4r lite ungef\u00e4rligt. Man m\u00e4ter t.ex. med \u201dvattenglas\u201d ist\u00e4llet f\u00f6r dl. Jag uppskattar ett vattenglas till ca 2,5 dl. Syran kommer fr\u00e5n sherryvin\u00e4ger, som i mitt fall \u00e4r 7-procentig (vet inte om det skiljer sig mellan olika m\u00e4rken). N\u00e4r man\u00a0ber\u00e4knar\u00a0andelen sherry och vatten f\u00e5r man en syrahalt p\u00e5 ca 4,7 %. Till 7,5 dl v\u00e4tska ska man ha 4 tsk salt.<br \/>Det svenska receptet anv\u00e4nder 12-procentig \u00e4ttikssprit, vilket ger en utsp\u00e4dd syrahalt p\u00e5 2 %. De 6 dl v\u00e4tska ska blandas med 1 msk (dvs. 3 tsk) salt. Saltm\u00e4ngden \u00e4r allts\u00e5 i stort sett densamma.<br \/>Efter denna ber\u00e4kning och f\u00f6rberedande infrysning av fisk k\u00e4nns det r\u00e4tt tryggt att g\u00e5 vidare med det spanska receptet, trots annan fiskr\u00e5vara.<br \/>\u00c5terkommer med del 2, gravningen.
